How to make Cocolate Cupcakes
  • Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
  • Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water(batter will be thin). Pour batter into prepared pans.
  • 3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
  • CHOCOLATECUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter.Bake 22 to 25 minutes. Cool completely.Frost.About 30 cupcakes.

  • 100 g butter
  • 2/3 cup caster sugar
  • 1 tsp vanilla essence
  • 2 whole eggs (lightly beaten)
  • 1 cup self-raising flour (sifted)
  • 1/3 cup cocoa (sifted)
  • 1/2 tsp bicarbonate of soda
  • 1/2 cup milk

    Chocolate Frosting Ingredients:
  • 2 cups unsalted butter,softened
  • 3 tablespoons milk
  • 12 ounces semisweet chocolate, melted and cooled to lukewarm
  • 1 1/2 teaspoon vanilla extract
  • 3 cups powdered sugar

    2. Melt chocolate in a double boiler. Allow to cool until just warm.
    3. In a mixing bowl, beat butter until creamy, about 3 minutes.
    4. Add milk and vanilla. Beat until smooth
    5. Add melted chocolate. Beat about 3 minutes.
    6. Add powdered sugar, beating on low until smooth and creamy.
